Our selection varies and flows with the seasons and local availability.  This is a collaborative initiative of what the farmers’ find particularly abundant and at the peak of seasonal glory, and the chef’s creative inspiration.   Each week we make several varieties in small batches to maintain superior quality and cutting edge layered flavor.

Be prepared to have all of your senses engaged, your heart warmed and your soul transformed.  This is magical brew.  Just heat and serve.  Real food.  Made by hand in the Berkshires.

APPLE BUTTERNUT SQUASH  DAIRY  

The grand belle of the golden soups. This soothing, ethereal bisque blends the best of local produce -- squash, carrots, apples and onions, fragrant with fresh sage and rosemary, mellowed with sweet cream and cider.  A land of milk and honey in a bowl.  Soup to come home to ourselves.

BLACK BEAN WITH SMOKED AND ROASTED CHILES VEGAN - GLUTEN FREE
This luscious soup has a smoky quality and complexity from a variety of smoked and roasted chili peppers, oregano and orange zest.  The elegant black beans are pureed with tomato, caramelized onions and just the right amount of fire.  Serve with a dollop of yogurt or sour cream, some cheddar cheese and a sprinkling of fresh cilantro if you wish. Soup to see the world fresh and new.

MUSHROOM BARLEY  VEGAN

Savor the deeply satisfying, toothsome quality of barley nestled  in with carrots, celery, onion, and mushrooms and finished with parsley and dill.  Breathe in the powerful scent of the earth and know you are home.  Soup to nourish body, mind and spirit.
 

MULLIGATAWNY VEGAN - GLUTEN FREE

An energizing soup of hearty vegetables in a nourishing pool of pink lentils and chana dal (petite yellow split peas) -- the ancient healing therapy of Ayruveda.  In this version, carrots, cauliflower, onions, sweet potatoes, parsnip and peas are warmed by mild, sweet and pungent Indian spices and cooled with the silky milk of coconut.   Soup to awaken our exuberant life.

 

FARMHOUSE LENTIL VEGAN - GLUTEN FREE

My favorite lentil soup.  French lentils du puy simmered with onions, carrots, butternut squash, tomatoes and our golden vegetable stock.  Aromatic with bay and a touch of cumin and brightened with baby spinach.   Soup to keep the home fires burning.

 

SWEDISH MUSHROOM  DAIRY   

Similar to our wildly popular Summer Mushroom, this winter version has a bit more depth and texture with the mushrooms just barely pureed.  We've kept the characteristic buttermilk and dill, staples of the Swedish farmhouse, along with some sweet cream and potato to balance it out.  Simple goodness.  Peace and joy in our hearts soup.

TOMATO STILTON 
DAIRY   

A classic transformed into an unexpected treasure with the unequaled flavor of English blue Stilton cheese, fresh basil puree and the soothing touch of milk and cream.  Soup to find the extraordinary in the ordinary

 

POTATO CHEDDAR WITH BROCCOLI AND CAULIFLOWER DAIRY

This will give you that warm fuzzy feeling, though the chilly winds blow.  Wholesome with creamy colored cauliflower, potatoes and onions and brightened with broccoli, this has the toasty comfort of a stuffed baked potato enriched with milk and cream and the wisdom of aged cheddar. Soup for the discerning one seeking a comfort zone.

 

TUSCAN MINESTRONE  VEGAN - GLUTEN FREE

In this warming soup, fresh fennel serves as a counterpoint to the classic mélange of white beans, carrots, haricot vèrts,  cabbage, onion and tomato.  Aromatic with basil and bay ̶ serve with ciabatta and chards of fresh Parmesan over pasta or creamy polenta Soup to manifest our dream.

 

YELLOW SPLIT PEA VEGAN - GLUTEN FREE

This will take you on a trip down memory lane if, like me, you grew up on tomato soup and grilled cheese sandwiches.  Here, in a take on  this homey  combo, you have everything that you need.  Chunks of farmhouse cheddar in a dreamy tomato field.  Pure comfort in a  bowl.  Soup to come home to our seves.

 

ROASTED ROOT VEGETABLE  VEGAN - GLUTEN FREE

Considering these roots forced their way up through hard, packed earth with fierce determination to thrive  and flourish, they have a powerfully grounding and sustaining affect on us.   In this soup a grand array of roots  ̶  carrots, sweet potatoes, onions, parsnip, turnip, celeriac and daikon  ̶  commune 'en roti' as they caramelize into a rich, sweet earthy purée, redolent with roasted garlic and fired with fresh ginger root Soup to discover our roots.
