Our selection varies and flows with the seasons and local availability.  This is a collaborative initiative of what the farmers’ find particularly abundant and at the peak of seasonal glory, and the chef’s creative inspiration.   Each week we make several varieties in small batches to maintain superior quality and cutting edge layered flavor.

Be prepared to have all of your senses engaged, your heart warmed and your soul transformed.  This is magical brew.  Just heat and serve.  Real food made by hand in the Berkshires.

SPRING / SUMMER SOUPS

 

NEW POTATO LEEK AND ARUGULA DAIRY
Brand new baby red, thin-skinned potatoes combine with sautéed onions, leeks, and a generous handful of the sweet scented roasted garlic.  Simmered in rich chicken stock and then puréed with a last minute addition of peppery arugula greens and a touch of sweet cream to soothe you.  Soup to keep you safe and sound.

 

SWEET PEA WITH FRESH MINT DAIRY
Sweet garden peas fresh with the clean taste of green.  Add young, translucent onions, some potato for depth and a hint of mint and cream.  Simple.  Sweet.  Pale green potage.  Enjoy warmed or chilled.  Soup to refresh the spirit.


LENTILS WITH GOLDEN APRICOTS  VEGAN / GLUTEN-FREE

This soup will transport you to the colorful intrigue of the spice trade markets. French lentils du puy are simmered with sautéed onions,  warmed with exotic spices - cumin, cardamon and coriander -- and sweetened with golden apricots.  Serve icy cold or warmed  with a dollop of Greek yogurt  and a sprinkling of fresh cilantro Soup to live fully and deeply.

TOMATO CHÈVRE VEGETARIAN / GLUTEN-FREE
The sweetness of the tomato unfolds in the company of earthy goat cheese locally produced by Rawson Brook Farm.  We can taste the  radiance of the sun and the majesty of the mountain in the presence of orange and rosemary branches, honeyed roasted garlic and a touch of milk and cream.

SUMMER  MUSHROOM DAIRY
Similar to our wildly popular Swedish Mushroom, this soup is great chilled (don't forget to heat from the freezer to meld together, then rechill).  We've kept the characteristic buttermilk and dill, staples of the Swedish farmhouse, along with some sweet cream and potato to balance it out.  Simple earthy goodness.

BLACK BEAN WITH CORN VEGAN / GLUTEN-FREE
A chunky salsa of a soup, this black bean soup has roasted red and poblano peppers, corn and tomatoes in a mildly spicy Caribbean base.  Enjoy chilled as is or with added cooked shrimp and avocado.  Or heated over rice.  Either way, it makes an easy one-dish meal..   Soup to access wholeheartedness.

SENEGALESE CURRIED CARROT APPLE  DAIRY
The darling of our golden soups, this is a soothing blend of carrots, apples, onions and celery, enriched with chicken stock and mellowed with a touch of cream and mild, sweet and pungent Indian spices.  Soup for a happy heart.
 
RED PEPPER BUTTERMILK
DAIRY
Bold and beautiful, this coral colored soup is rich with velvety roasted peppers, tomato and leeks and cooled with the creamy low-fat buttermilk.  Add a sprinkling of chives and a dollop of sour cream or yogurt if you wish, and serve warmed or chilled.   Great paired with shrimp, salmon, black beans or corn.   Soup to own your magnificence.

MULLIGATAWNY VEGAN / GLUTEN-FREE
An energizing soup of hearty vegetables in a nourishing pool of pink lentils and chana dal (petite yellow split peas) - the ancient healing therapy of Ayruveda.  In this version, carrots, cauliflower, onions, sweet potatoes, parsnip and peas are warmed by mild, sweet and pungent Indian spices and cooled with the silky milk of coconut.  This soup makes an interesting cold soup as well, with the addition of yogurt and fresh cilantro.

TOMATO FENNEL ORANGE VEGAN / GLUTEN-FREE
