Our selection varies and flows with the seasons and local availability. This is a collaborative initiative of what the farmers’ find particularly abundant and at the peak of seasonal glory, and the chef’s creative inspiration. Each week we make several varieties in small batches to maintain superior quality and cutting edge layered flavor.

What would summer in the Berkshires be without the deep pink smile of cold beet
soup. In this version, locally farmed beets are puréed with onions, potato and
low-fat buttermilk until silky smooth and the color of fuchsia. Enjoy as is, or
serve in the traditional ceremonious style with separate bowls of boiled potato,
hardboiled egg, fresh dill and sour cream.

An
intoxicating blend of tomatoes, sautéed red onions, roasted garlic, the
captivating fennel bulb and a sunburst of fresh orange juice and zest. Enjoy
icy cold with a drizzle of black olive tapenade. Or try it hot with a scoop of
saffron risotto and some freshly shaved Parmesan and serve in oversized,
handmade pottery bowls.

Nothing provokes our appetite more than an ice cold bowl of fresh gazpacho.
Bursting with flavor, this version was wildly popular at Farm Country, my old
restaurant in Millerton, N.Y. in the '90's. It combines the classic crunch of
fresh vegetables enlivened with lemon and horseradish, reminiscent of a virgin
bloody mary…. Or add some Vodka! Build it into a meal with the addition of
cooked shrimp, avocado and cilantro and a squeeze of lime. Soup
to kick back and chill.

PEA WITH FRESH MINT

This
luscious soup showcases sweet garden peas fresh with the clean taste of green.
Add young, translucent onions, some potato for depth and a hint of mint and
cream. Simple. Sweet. Pale green potage. Enjoy warmed or chilled.

ARTICHOKE HUMMUS

A trip to Maine last summer inspired this yummy soup after a taste of a hummus
dip made with artichoke and lemon. Here, chick peas blend with sautéed onions
and garlic until silky smooth, then thinned with our golden vegetable stock,
while fresh lemon juice and the unforgettable tangy artichoke, coarsely chopped,
promises to enlighten the palate.

TOMATO CHÈVRE

The sweetness of the tomato unfolds in the company of earthy goat cheese locally
produced by Rawson Brook Farm. We can taste the radiance of the sun and the
majesty of the mountain in the presence of orange and rosemary branches, honeyed
roasted garlic and a touch of milk and cream.

SWEDISH MUSHROOM

This is a close rival to our refreshing Cucumber Dill when served icy cold.
Domestic white mushrooms are puréed with sautéed onions, garlic, potato and
chicken stock. Then cooled with buttermilk, cream and dill. Light.
