Our selection varies and flows with the seasons and local availability.  This is a collaborative initiative of what the farmers’ find particularly abundant and at the peak of seasonal glory, and the chef’s creative inspiration.   Each week we make several varieties in small batches to maintain superior quality and cutting edge layered flavor.

Be prepared to have all of your senses engaged, your heart warmed and your soul transformed.  This is magical brew.  Just heat and serve.  Real food made by hand in the Berkshires.

SPRING-SUMMER SOUPS

 

BERKSHIRE BORSCHT DAIRY
What would summer in the Berkshires be without the deep pink smile of cold beet soup.  In this version, locally farmed beets are puréed with onions, potato and low-fat buttermilk until silky smooth and the color of fuchsia.  Enjoy as is, or serve in the traditional ceremonious style with separate bowls of boiled potato, hardboiled egg, fresh dill and sour cream.

TOMATO FENNEL ORANGE VEGAN
An intoxicating blend of tomatoes, sautéed red onions, roasted garlic, the captivating fennel bulb and a sunburst of fresh orange juice and zest.  Enjoy icy cold with a drizzle of black olive tapenade. Or try it hot with a scoop of saffron risotto and some freshly shaved Parmesan and serve in oversized, handmade pottery bowls.  Soup to manifest our dream.

NEW POTATO LEEK AND ARUGULA DAIRY
Brand new baby red, thin-skinned potatoes combine with sautéed onions, leeks, and a generous handful of the sweet scented roasted garlic.  Simmered in rich chicken stock and then puréed with a last minute addition of peppery arugula greens and a touch of sweet cream to soothe you.  Soup to keep us safe and sound.

 

GAZPACHO VEGAN
Nothing provokes our appetite more than an ice cold bowl of  fresh gazpacho.  Bursting with flavor, this version was wildly popular at Farm Country, my old restaurant in Millerton, N.Y. in the '90's.  It combines the classic crunch of fresh vegetables enlivened with lemon and horseradish, reminiscent of a virgin bloody mary…. Or add some Vodka!  Build it into a meal with the addition of cooked shrimp, avocado and cilantro and a squeeze of lime.  Soup to kick back and chill.

SWEET PEA WITH FRESH MINT DAIRY
This luscious soup showcases sweet garden peas fresh with the clean taste of green.  Add young, translucent onions, some potato for depth and a hint of mint and cream.  Simple.  Sweet.  Pale green potage.  Enjoy warmed or chilled.  Soup to access wholeheartedness.


ARTICHOKE HUMMUS
VEGAN

A trip to Maine last summer inspired this yummy soup after a taste of a hummus dip made with artichoke and lemon.  Here, chick peas blend with sautéed onions and garlic until silky smooth, then thinned with our golden vegetable stock, while fresh lemon juice and the unforgettable tangy artichoke, coarsely chopped, promises to enlighten the palate.

TOMATO CHÈVRE VEGETARIAN
The sweetness of the tomato unfolds in the company of earthy goat cheese locally produced by Rawson Brook Farm.  We can taste the  radiance of the sun and the majesty of the mountain in the presence of orange and rosemary branches, honeyed roasted garlic and a touch of milk and cream.

SWEDISH  MUSHROOM
DAIRY

This is a close rival to our refreshing Cucumber Dill when served icy cold.  Domestic white mushrooms are puréed with sautéed onions, garlic, potato and chicken stock.  Then cooled with buttermilk, cream and dill.  Light.  Earthy. Cool taste of Summer.  Serve chilled or warmed.

BLACK BEAN WITH SMOKED AND ROASTED CHILES VEGAN
This luscious soup has a smoky quality and complexity from a variety of smoked and roasted chili peppers, orange zest and lime. The elegant black beans are puréed with tomato, caramelized onion and just the right amount of fire.  Great accompaniment to grilled pork or shrimp and a fresh corn ragout.   Soup to live fully and deeply.

SENEGALESE DAIRY
The darling of our golden soups, this is a soothing blend of carrots, apples, onions and celery, enriched with chicken stock and mellowed with a touch of cream and mild, sweet and pungent Indian spices.  Soup for a happy heart.
 
RED PEPPER BUTTERMILK
DAIRY
Bold and beautiful, this coral colored soup is rich with velvety roasted peppers, tomato and leeks and cooled with the creamy low-fat buttermilk.  Add a sprinkling of chives and a dollop of sour cream or yogurt if you wish, and serve warmed or chilled.  Soup to welcome new beginnings.

VICHYSSOISE
DAIRY
Our version of this dream of a summer soup.  Creamy, Yukon Gold potatoes are simmered with sautéed onions and leeks, sweet roasted garlic and rich chicken stock and the haunting intrigue of fennel bulb.  Finished with sweet cream and fresh chives.  Serve icy cold.  Soup to come home to ourselves.
 

WILD MUSHROOM VEGAN
An intoxicating blend of forest treasures. Domestic, cremini, shitake, oyster and portabella mushrooms mingle with caramelized onion and garlic and  a touch of potato.  Fragrant with the seduction of fresh rosemary.  Woodsy. Earthy.  Soup to access wholeheartedness.
